CHATEAU DE SERAME
MINERVOIS
2004
Mis En Bouteille Au Chateau
Corbieres France
This starts with an open note like violets growing in barnyard crap.
(Yummy, eh?)
You get a mid-palate palate hit of sage, followed by the new French oak right up in the frizzont.
As you swallow, you get spice, a long mouthwatering dark cherry, opening as the spice comes and piggybacks.
Killer with new baguette, basil, tomato, Brie. (I know, I know, predictable referference…Cut me some slack)
The Brie balances tannin, basil picks up the sage, buys it a drink at the bar,
Still dark cherry, but the sages heart softens after about 30 min, as it decides
to come home with the basil)
STILL you’re getting the finish as the oak twirls around your mouth…
Maybe even bricking a tad, this will be done in about 2 yrs. Get after it, son.
After 45 min it’s got, just a quarter-sized spot of oak sitting there, a dash of pepper.
Weird. Cool. Friggin awesome.
Best part, kids.
Only 14 bucks American. Dig it.
I give it an 84.5, the .5 for the price.
